Shaggy Dogs


1 cup chocolate chips

1/2 cup butter 

2 eggs

1 pound powdered sugar 

1 package mini marshmallows (10 ounce)

1 cup chopped nuts 

1 pound coconut 

Mix together 1 cup chocolate chips and 1/2 cup butter. Melt slowly in microwave or on stove top in a large pan.

When melted mix again. Then stir in 2 beaten eggs and 1 pound (4 cups) powdered sugar. Mix well.

Fold 1 ten ounce package of miniature marshmallows and 1 cup chopped nuts into the chocolate mixture. Mix well. Make sure all marshmallows are coated with chocolate.

Place coconut on plate or pie tin. Spoon mixture out onto coconut, one spoonful at a time. Press coconut into marshmallow/chocolate mound. I use my hands and press it into each mound gently but firmly. Coat all sides. (I used my 1/4 cup cookie scoop.)

Place onto parchment lined cookie sheets.

Let set until chocolate is cooled and set. Store in an airtight container.
